Looking for a relatively affordable schnitzel that actually comes with all the sides included in the price? That’s how I ended up at Pauli Stubm. In Salzburg, schnitzel can sometimes feel a little overpriced, some restaurants charge a premium for just the meat, with extras like potato salad or cranberries costing you more on top. At Pauli Stubm though, the classic schnitzel plate already comes complete with homemade potato salad, cranberry sauce, and lemon for freshness, all for €25.90. That alone caught my attention.

What really sealed the deal was its reputation online. With glowing reviews and an impressive 4.7-star rating on Google, I was curious to see if it truly lived up to the hype, and whether it would feel like just another touristy stop or something more genuine. Spoiler alert: I left full, happy, and convinced it deserves every bit of praise it gets.

The first thing that struck me? The speed. I’m not exaggerating when I say the food came out within five minutes of ordering, I was shocked (in the best way). Another little touch I loved that the water is served in a beer jug. It’s such a quirky, fun detail that just adds to the charm.

The restaurant has both indoor and outdoor seating. Indoors feels cosy and warm, while the outdoor terrace doubles as a beer garden, perfect for enjoying Salzburg’s evening air. I walked in around 7pm and luckily found a table, but I’d definitely recommend reserving if you’re coming in a group since it fills up quickly. The staff were friendly and efficient, I actually preferred the service here compared to Meissl & Schadn, which felt like they had more attentive service.

Let’s talk about the schnitzel, because wow. For €25.90, you get not one but two schnitzels, served with homemade potato salad, cranberry sauce, and lemon. The schnitzel itself was light and crispy, not heavy or oily at all, and the tangy potato salad paired so well with it. The cranberries gave that sweet contrast, and the lemon added a refreshing touch. Considering Meissl & Schadn charges €28 for schnitzel without any sides, this felt like a great value.

For dessert, I went for the apple strudel (€6.90). It arrived warm and soft, with whipped cream on the side and even some fruit (watermelon and orange). This was my very first apple strudel, so I can’t compare it to others, but I loved it. It wasn’t too heavy or overly sweet, just the perfect way to finish the meal.

Salzburg isn’t the cheapest city to dine in, so finding a place where you can enjoy generous portions, traditional flavours, and friendly service for around €20–30 per person feels like a win. Pauli Stubm quickly became one of my favourite dining experiences in Salzburg. It’s the kind of place that doesn’t try too hard, yet everything just works, the history, the atmosphere, the food, and the service. Whether you sit inside for a cosy evening or outside in the beer garden, it feels special in that unpretentious, down-to-earth way.
So if you’re planning a trip to Salzburg and want more than just the tourist-filled spots in the centre, Pauli Stubm should definitely be on your list. Pair it with a visit to the fortress and you’ve got yourself a perfect Salzburg evening, history, views, and a hearty schnitzel to end the day.
