Tsujihan Hong Kong: Uni Bowl Experience – Nihonbashi Kaisen Don

Located in Tung Chung, Hong Kong, this Japanese restaurant has made quite a name for itself, bringing authentic flavours and a unique dining experience to the city. Though a bit out of the way for some, the trek is definitely worth it for anyone seeking a premium sashimi bowl that blends freshness, flavour, and value. Hereโ€™s a look at my experience at Tsujihan and what you can expect.

Experience

Tsujihan may be a bit off the beaten path, located in Citygate Outlets in Tung Chung, but once you walk in, the bustling atmosphere and the skilled chefs behind the bar immediately grab your attention. I had heard that itโ€™s a popular spot, often packed with customers, but when I visited on a weekday, I was pleasantly surprised to find there was plenty of space to walk in without any wait.

The restaurant itself had a warm, inviting atmosphere with a simple, clean design, which highlights the artistry of the chefs. One of the unique aspects of dining at Tsujihan is sitting at the bar, where you can watch the chefs prepare your sashimi bowl. The process is as much an experience as the meal itself, and thereโ€™s something satisfying about watching the bowl come together, especially when the chefs top it off with glistening salmon roe and delicate uni.

Food

The highlight of the meal, of course, was the Tokujo (Supreme) uni bowl with an Ume base. I opted for the extra crab, double uni, and salmon roe for a total of $298 HKD (approximately $58 AUD). This indulgent bowl was packed with flavour and texture, making it hard not to savour every bite.

The portion size was more than enough to leave me completely full, and I particularly enjoyed the balance of flavours. The crab, uni, and salmon roe were incredibly fresh, and each bite was a burst of oceanic delight. The chefs carefully assemble each ingredient, layering it with precision to ensure the perfect bite every time.

One of the most satisfying moments of the meal was when the chef added the uni on top of the bowl, followed by a generous covering of salmon roe. The combination of the creamy uni and salty roe made each bite feel like an indulgent treat.

I was also recommended to save some of the kingfish sashimi and rice to pair with the soup thatโ€™s served at the end of the meal, and that was an absolute game changer. The comforting soup, with the rich fish flavour, provided a perfect, hearty ending to the meal.

Price

For such high-quality ingredients, the meal was reasonably priced. At $298 HKD (roughly $58 AUD) for the Tokujo (Supreme) bowl, the value is undeniable. Given that it includes fresh, high-end ingredients like uni and salmon roe, along with a fulfilling meal thatโ€™s both a sashimi bowl and a soup to end, Iโ€™d say itโ€™s well worth the price. Itโ€™s a great way to enjoy a premium meal.

Final Thoughts

Tsujihanโ€™s Tokujo (Supreme) uni bowl is a treat for anyone looking to indulge in a top-notch sashimi experience. The freshness and quality of the ingredients, the meticulous preparation process, and the cozy atmosphere make it a memorable dining experience.
